Miso soup of the day: Leftover egg whites and veggies

One day, I asked my mom what to do with leftover white eggs and she answered “Simply, add in the miso soup.” So far,  I found it the easiest way to use them up 🙂 Beat the egg whites well and pour evenly in spiral motion before taking the pot from over the fire. 

Ingredients: Leftover white eggs, diced sweet potatoes and scallions.
